A thermocouple sensor is used in various pilot light assemblies and works by joining two disimilar metals. When heated or cooled, a small voltage is created, which can therefore be measured and correlated to a specific temperature.  As long as temperature is maintained, a small electrical signal is sent to the gas valve to keep it open.  A pilot light that can't stay lit may be a sign that your thermocouple is defective and needs replacing.
